        Birria Tacos Recipe

        Ingredients

        • 1.5 kg (3.3 lbs) chuck roast or beef short ribs
        • 6 dried guajillo chiles, stemmed and seeded
        • 4 dried ancho chiles, stemmed and seeded
        • 500 ml (2 cups) beef broth
        • 500 ml (2 cups) water
        • 400 g (2 cups) chopped tomatoes
        • 1 large onion, chopped
        • 6 cloves garlic, peeled
        • 15 g (1 tbsp) apple cider vinegar
        • 2.5 g (1/2 tsp) ground cumin
        • 5 g (1 tsp) dried oregano
        • 2.5 g (1/2 tsp) ground cinnamon
        • 2 bay leaves
        • Salt and pepper to taste
        • 500 g (10 small) corn tortillas
        • 150 g (1.5 cups) shredded Oaxaca cheese
        • Fresh cilantro, chopped (for garnish)
        • 50 g (1/4 cup) diced onions (for garnish)
        • Lime wedges (for serving)

        Instructions

        Step 1: Prepare the Chiles

In a large pot, bring the beef broth and water to a boil. Add the guajillo and ancho chiles. Reduce the heat and simmer for 10 minutes until the chiles are softened. Remove the chiles from the liquid and set aside. Reserve the cooking liquid.

        Step 2: Make the Marinade

In a blender, combine the softened chiles, chopped tomatoes, onion, garlic, apple cider vinegar, cumin, oregano, cinnamon, and a pinch of salt and pepper. Blend until you have a smooth paste. Add some of the reserved cooking liquid if too thick.

        Step 3: Marinate the Beef

Place the beef in the large pot or Dutch oven. Pour the marinade over the meat, ensuring it’s fully coated. Cover and refrigerate for at least 2 hours, preferably overnight, to allow flavors to meld.

        Step 4: Cook the Birria

Preheat your oven to 160°C (325°F). Place the marinated beef back on the stove, add the bay leaves, and mix in the reserved cooking liquid. Cover and transfer the pot to the oven. Cook for about 3 hours or until the beef becomes tender and easy to shred. Alternatively, cook on low heat on your stovetop for about 2.5 hours.

        Step 5: Assemble the Tacos

Once the beef is cooked, remove it from the pot and shred using two forks. Heat a skillet or griddle over medium heat. Dip each tortilla briefly in the birria sauce, then place on the skillet. Top with shredded beef and cheese. Fold the tortilla to enclose the filling and cook until crisp, about 2-3 minutes per side.

        Step 6: Serve and Garnish

Transfer the tacos to a serving platter. Garnish them with fresh chopped cilantro, diced onions, and a squeeze of lime juice. Serve alongside a small bowl of the remaining birria sauce for dipping.

        Conclusion

You’ve just taken a flavorful journey through the heart of Mexican tradition by creating authentic Birch Tacos. Their bold, spicy, and richly nuanced taste makes them an exciting addition to any culinary repertoire. Whether it’s a cozy family dinner or a festive gathering, these tacos are sure to captivate and delight. As you savor each bite, remember that the artistry of cooking brings cultures, flavors, and stories together. Happy feasting!
