        Preservation Techniques Cooking Time

Total estimated time: 24 hours for drying, 2 hours for freezing

Recipe: Preserving Ingredients with Drying or Freezing

        Ingredients

        • 500g (1 lb) strawberries, halved
        • 300g (10 oz) tomatoes, sliced
        • 250g (9 oz) mushrooms, cleaned and sliced
        • 500g (1 lb) apples, peeled and sliced
        • 200g (7 oz) peas, shelled

        Instructions

        Step 1: Preparation

Begin by washing all produce thoroughly. Pat dry with blotting paper or clean towels to remove excess moisture, especially important for the drying process. Halve strawberries and slice tomatoes, apples, and mushrooms evenly to ensure uniform drying and freezing.

        Step 2: Drying Technique

        For Dehydrator Use:

Arrange prepped ingredients in a single layer on dehydrator trays. Set the dehydrator to 57°C (135°F) for fruits and 64°C (150°F) for vegetables. Dry strawberries and tomatoes for approximately 10-12 hours and mushrooms for 6-8 hours.

        For Oven Method:

Preheat the oven to 60°C (140°F). Place ingredients on a baking sheet lined with parchment. Prop the oven door open slightly to allow moisture to escape. Dry for the same durations as the dehydrator method, checking occasionally.

        Step 3: Freezing Technique

Spread blanched apples and peas on a baking sheet in a single layer and place them in the freezer for 1-2 hours until frozen solid. Transfer into labeled freezer-safe containers or zip-top bags, ensuring to remove as much air as possible to prevent freezer burn.

        Step 4: Storage

Store dried items in an airtight container in a cool, dark place for optimal shelf-life. Frozen produce should be kept in the freezer, ensuring bags or containers are tightly sealed to last several months.

        Conclusion

Through the mastery of drying and freezing techniques, you’re now able to preserve the vibrant flavors and nutritious qualities of your ingredients, making them available year-round. These methods bring simplicity and convenience to your kitchen, allowing you to enjoy seasonal foods at any time. Continue experimenting with various ingredients and discover the joys of sustainable and efficient home cooking.
