        The Queso Fresco Recipe

        Ingredients

        • 4 liters (1 gallon) whole milk
        • 60 ml (1/4 cup) white vinegar or fresh lemon juice

        Pour the whole milk into a large pot. Over medium heat, warm the milk gently to 31°C (88°F) while stirring occasionally to prevent scorching. Use a thermometer for precise temperature control. Heating the milk slowly helps prevent curds from becoming grainy.

        Step 2: Curds Formation

        Once the milk reaches 31°C (88°F), slowly add the white vinegar or lemon juice, stirring continuously until curds begin to form. This should happen within a few minutes. You’ll notice the milk separating into curds (solid) and whey (liquid).

        Step 3: Draining the Whey

        Line a colander with cheesecloth and place it over a large bowl. Carefully ladle the curds into the cheesecloth. Once all curds are transferred, gather the cheesecloth’s edges, forming a pouch, and allow whey to drain for about 10 minutes.

        Step 4: Salting and Shaping

        Transfer the curds into a mixing bowl and gently mix in the sea salt. Return the salted curds to the cheesecloth and shape into a disc. Place the wrapped cheese in the colander and use a saucer with a weight on top to press the cheese gently. Allow it to sit for 1 hour to remove excess whey.

        Step 5: Resting

        Carefully unwrap your cheese and transfer it to a plate. Cover and refrigerate for at least 1 hour before consuming. This resting period helps the flavors to mature slightly and makes the cheese easier to cut.
