1 cup (240 ml) beef or lamb stock
2 tbsp all-purpose flour
2 tbsp olive oil
Salt and pepper to taste
1 tsp fresh thyme leaves or 1/2 tsp dried thyme
1 tsp fresh rosemary, chopped
For the Mashed Potato Topping:
2 lbs (900 g) potatoes, peeled and cubed
1/2 cup (120 ml) whole milk or heavy cream
4 tbsp unsalted butter
1/2 cup (50 g) shredded cheddar cheese (optional)
Salt and pepper to taste
Instructions
Step 1: Prepare the Mashed Potatoes
Place the peeled and cubed potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Mash with milk, butter, salt, and pepper until smooth. Stir in shredded cheddar if using.
Set aside to cool slightly while preparing the filling.
Step 2: Cook the Lamb Filling
In a large skillet, heat olive oil over medium heat. Add ground lamb and cook until browned, breaking it up into small pieces, about 5-7 minutes.
Remove the lamb from the skillet and set aside. In the same skillet, add onions, carrots, and garlic. Sauté until softened, about 5 minutes.

Return the browned lamb to the skillet. Stir in the frozen peas and season with salt and pepper to taste. Simmer for 5 minutes until the mixture thickens slightly.
Step 3: Assemble the Shepherd’s Pie
Preheat your oven to 400°F (200°C).
Transfer the lamb filling to a baking dish and spread it evenly across the bottom.
Spoon the mashed potatoes over the filling, spreading them to cover the entire surface. Use a fork to create ridges on top for a decorative finish.
Optional: Sprinkle additional shredded cheddar cheese on top for a golden crust.
Step 4: Bake the Pie
