        • Salt and pepper to taste
        • Fresh cilantro or parsley for garnish
        • Freshly baked bread for serving (optional)

        Instructions:

        Step 1: Preheat the oven to 200°C (390°F).

        Step 2: In an oven-safe skillet, heat the olive oil over medium heat. Add the merguez sausages and cook until browned on all sides, about 5-7 minutes. Remove sausages and set aside.

        Step 3: In the same skillet, sauté the diced red bell pepper, chopped onion, and minced garlic until the onion becomes translucent and the peppers are tender, approximately 5 minutes.

        Step 4: Stir in the cherry tomatoes, ground cumin, paprika, and cayenne pepper if using. Season with salt and pepper. Cook for another 2 minutes.

        Step 5: Return the sausages to the skillet among the vegetables. Crack an egg into each of the four spaces.

        Step 6: Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the egg whites are set but the yolks remain slightly runny.

        Step 7: Remove the skillet from the oven and let cool slightly. Garnish with fresh cilantro or parsley. Serve hot with freshly baked bread.
