        • 1 tsp (5g) cumin
        • Salt and pepper, to taste
        • 125ml (1/2 cup) orange juice
        • 60ml (1/4 cup) olive oil
        • 2 tomatoes, chopped
        • Chopped parsley, for garnish
        • Cooked rice, for serving
        • Orange slices, for serving

        Instructions

        Step 1: Soak the Beans

        Rinse the dried black beans thoroughly. Place them in a large bowl and cover with 1 liter (4 cups) of water. Allow the beans to soak overnight or for at least 8 hours.

        Step 2: Prepare the Meat

        In a large Dutch oven or heavy pot, heat olive oil over medium heat. Add bacon and cook until slightly crispy. Add pork shoulder chunks and brown on all sides. Add the sausages and chorizo, cooking to release their flavors. Remove meats from the pot and set aside.

        Step 3: Sauté Aromatics

        In the same pot, add more olive oil if necessary. Add chopped onions and garlic, sautéing until onions are translucent. Stir in chopped tomatoes and cumin, cooking for a few more minutes until the tomatoes are soft.

        Step 4: Cook the Beans

        Drain the soaked beans and add them to the pot along with the reserved meats. Pour in the remaining 1 liter (4 cups) of water. Add the bay leaf and season with salt and pepper. Cover and simmer on low heat for about 2 hours, or until the beans are tender and the flavors meld together.

        Step 5: Final Adjustments

        Once the beans are tender, stir in the orange juice and let the feijoada cook for an additional 15 minutes. Taste and adjust seasoning if necessary. For a thicker stew, use a mixer or blender to puree a portion of the beans and meats before returning them to the pot.

        Step 6: Serve

        Garnish the feijoada with chopped parsley. Serve hot over a bed of cooked rice, accompanied by slices of orange on the side. This traditional pairing heightens the flavors and brings out the zest of the dish.
