Gulab Jamun with Rose Syrup
Ingredients
- 200g (1 2/3 cups) milk powder
- 50g (1/3 cup) all-purpose flour
- 5g (1 tsp) baking soda
- 45ml (3 tbsp) ghee or unsalted butter, melted
- 120ml (1/2 cup) milk
- 600ml (2 1/2 cups) water
- 300g (1 1/2 cups) granulated sugar
- 15ml (1 tbsp) rose water or rose essence
- 3-4 green cardamom pods
- Pistachios or almonds for garnishing (optional)
- Oil or ghee for deep frying
Instructions
Step 1: Make the Rose Syrup
In a large saucepan, combine water and sugar. Add the cardamom pods and bring the mixture to a boil. Stir until the sugar dissolves completely, then reduce the heat and let it simmer for about 5 minutes. Remove from heat and stir in the rose water. Set aside the syrup to cool.
Step 2: Prepare the Dough
In a mixing bowl, combine the milk powder, flour, and baking soda. Add melted ghee and mix well. Slowly add milk in increments, mixing gently to form a soft, smooth dough. Be careful not to over-knead the dough.
Step 3: Shape the Dumplings
Divide the dough into small portions and shape them into smooth, crack-free balls, about the size of a lemon. Ensure that the balls are smooth as cracks may cause them to break while frying.
Step 4: Fry the Gulab Jamun
In a deep pan over medium heat, heat the ghee or oil to about 150°C (300°F). Gently slide the balls into the hot oil, frying them slowly. Stir gently and continuously to ensure even browning. Fry until the balls are golden brown all over, then remove with a slotted spoon and drain on a paper towel-lined plate.
Step 5: Soak in Syrup
While still warm, place the fried Gulab Jamun into the warm rose syrup. Let them soak for at least 30 minutes to 1 hour, allowing the flavors to blend beautifully. The dumplings will double in size as they absorb the syrup.
Step 6: Serve
Gently remove the Gulab Jamun from the syrup using a slotted spoon and place them in a serving dish. Garnish with chopped pistachios or almonds if desired. Serve warm or at room temperature and enjoy the delightful flavors.
