        Ingredients

        • 100g (3/4 cup) tapioca flour
        • 240ml (1 cup) water
        • 1 large egg (approximately 55g/2 oz)
        • 1g (1/8 tsp) salt
        • 10g (2 tsp) unsalted butter or oil for cooking
        • Optional: Fillings such as cheese, ham, chocolate, or jam

        Instructions

        Step 1: Preparing the Batter

        In a mixing bowl, add the tapioca flour and water. Using a whisk or fork, mix them together until smooth. Ensure there are no lumps in the batter. If needed, pass the mixture through a sieve to achieve a uniform consistency.

        Step 2: Incorporating Additional Ingredients

        Crack the egg into the batter and add the salt. Continue to whisk until the ingredients are fully combined, resulting in a smooth, cohesive mixture.

        Step 3: Heating the Pan

        Place a non-stick skillet over medium heat. Allow it to warm for about 2 minutes. Add a small amount of butter or oil, using a spatula to evenly coat the surface.

        Step 4: Cooking the Crepes

        Pour approximately 60ml (1/4 cup) of the batter into the center of the hot skillet. Swirl the pan to spread the mixture evenly, forming a thin layer. Cook for 2-3 minutes, or until edges start to lift and the bottom is golden brown. Flip carefully and cook the other side for an additional 1-2 minutes.

        Step 5: Adding Fillings

        Once the crepe is fully cooked, add your chosen fillings on one half. Fold the crepe over the fillings and allow it to cook for another minute, just enough to warm the added ingredients. Remove from the pan and repeat with the remaining batter.

        Step 6: Serving

        Serve your tapioca crepes warm. They can be enjoyed plain, or you can drizzle with honey, sprinkle with powdered sugar, or add additional garnishments that suit your taste.
