In another saucepan, combine the milk, heavy cream, half of the sugar, the vanilla bean seeds and pod, and a pinch of sea salt. Heat on medium until it starts to steam, but do not boil. Remove from heat and allow the vanilla to infuse for about 10 minutes. Remove the vanilla pod.
In a mixing bowl, whisk together the egg yolks and remaining sugar until it becomes pale and thick. Slowly add the warm milk mixture to the egg yolks, whisking constantly to temper the eggs. Return the mixture to the saucepan.
Place the saucepan over low heat, stirring constantly with a spatula, until the mixture thickens enough to coat the back of a spoon (approximately 82°C or 180°F). Do not let it boil to prevent curdling.
Strain the custard through a fine mesh sieve into a clean bowl to remove any curdled bits. Stir in the reduced red wine. Cover the bowl with plastic wrap, allowing the wrap to touch the surface of the custard to prevent a skin from forming. Refrigerate until thoroughly chilled, at least 2 hours or overnight for best results.
Once chilled, pour the custard into your ice cream maker and churn according to the manufacturer’s instructions, usually about 20-30 minutes. The gelato should have a smooth, soft-serve consistency.
Transfer the gelato into a freezer-safe container. Cover the surface with parchment paper to minimize ice crystal formation. Freeze until firm, at least 2 hours, before serving.
