        • 7g (1 packet) active dry yeast
        • 2 large eggs
        • 1/2 tsp salt
        • 2g (1/2 tsp) ground cinnamon
        • 200g (1 cup) packed light brown sugar
        • 60 ml (1/4 cup) heavy cream
        • 120g (1 cup) pecans, chopped
        • 100g (1/2 cup) raisins (optional)

        Instructions

        Step 1: Prepare the Dough

        In a small bowl, dissolve the yeast in the warmed milk (240 ml) and let it stand until frothy, about 5 minutes. In the bowl of a stand mixer, combine the flour (500g), sugar (100g), salt (1/2 tsp), and ground cinnamon (2g). Add in the eggs, melted butter (113g), and yeast mixture. Using the dough hook attachment, knead on medium speed for about 7-10 minutes or until the dough is smooth and elastic. If the dough is too sticky, add a tablespoon of flour at a time.

        Step 2: First Rise

        Form the dough into a ball and place it in a greased bowl, turning it to coat. Cover with plastic wrap and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.

        Step 3: Make the Caramel Topping

        In a small saucepan over medium heat, combine the brown sugar (200g), heavy cream (60 ml), and 57g (1/4 cup) of butter. Stir until the sugar is dissolved and the mixture is smooth. Pour this mixture into the bottom of a greased 9×13 inch (23×33 cm) baking dish, and sprinkle with half of the chopped pecans (60g).

        On a lightly floured surface, roll out the dough into a rectangle about 12×18 inches (30×45 cm). Brush with the remaining melted butter (56g), and sprinkle with the remaining brown sugar and pecans, adding raisins if desired. Roll the dough tightly from the longer side into a log.

        Cut the rolled dough into 12 equal pieces and place them cut side down in the prepared baking dish. Cover with plastic wrap and let rise for an additional 30-45 minutes.

        Preheat the oven to 180°C (350°F). Bake the buns for 25-30 minutes, or until golden brown and cooked through. If the tops are browning too quickly, cover loosely with foil. Let them cool in the dish for about 5 minutes before inverting onto a serving platter.
