        Ingredients

        • 240ml (1 cup) Ube jam (or fresh Ube, cooked and pureed)
        • 240ml (1 cup) heavy cream
        • 240ml (1 cup) whole milk
        • 100g (1/2 cup) granulated sugar
        • 5ml (1 tsp) pure vanilla extract
        • 2.5g (1/2 tsp) salt
        • 3 egg yolks
        • Optional: Food coloring to enhance the purple hue

        Instructions

        Step 1: Prepare the Ube Mixture

        In a blender or food processor, combine the Ube jam (or cooked Ube puree) with 120ml (1/2 cup) of the milk. Blend until smooth and set aside.

        Step 2: Create the Cream Base

        In a medium saucepan, combine the remaining milk, heavy cream, and sugar. Bring to a gentle simmer over medium heat, stirring occasionally. Do not let the mixture boil. Remove from heat once the sugar is fully dissolved.

        Step 3: Temper the Egg Yolks

        In a mixing bowl, whisk the egg yolks with the salt. Slowly add about 120ml (1/2 cup) of the warm cream mixture to the yolks while whisking constantly to prevent curdling. Gradually add the tempered yolks back into the saucepan with the cream mixture, stirring continuously.

        Step 4: Combine and Thicken

        Place the saucepan back on medium heat, stirring continuously until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes. Take the saucepan off the heat and stir in the Ube mixture and vanilla extract. Optionally, add a few drops of purple food coloring to enhance the color.

        Step 5: Chill the Mixture

        Pour the custard into a clean bowl and allow it to cool to room temperature. Cover with plastic wrap, pressing it directly against the surface to prevent a skin from forming, and refrigerate until thoroughly chilled, at least 2 hours or overnight for best results.

        Step 6: Churn the Ice Cream

        Once the mixture is chilled, pour it into your ice cream maker and churn according to the manufacturer’s instructions. The texture should be similar to soft serve when done.

        Step 7: Freeze and Serve

        Transfer the ice cream to a freezer-safe container, press a piece of parchment paper onto the surface, and cover with the lid. Freeze until firm, at least 2 hours, before serving. Scoop and serve your vibrant Ube Ice Cream, enjoying every creamy bite!
