        Sprinkle the sliced eggplant with salt on both sides and let them rest in a colander for about 30 minutes. Rinse and pat them dry with a kitchen towel.

        Fill one bowl with flour, the second with beaten eggs, and the third with a mixture of bread crumbs and half of the grated Parmesan cheese. Dip each eggplant slice in flour, then in eggs, and finally in the breadcrumb mixture.
