        Move the seared steaks onto the prepared baking sheet with wire rack. Insert an oven-safe thermometer into the thickest part of one steak (avoid touching the bone). Transfer to the preheated oven.

        Bake until the internal temperature reaches 50°C (122°F) for rare, 57°C (135°F) for medium-rare, or 63°C (145°F) for medium. This will take approximately 15-25 minutes depending on your desired level of doneness.

        In the last 5 minutes of baking, melt butter in a small saucepan with smashed garlic and rosemary. Spoon the aromatic butter over the steak, adding layers of flavor as it bakes.
