        • 2 sprigs fresh thyme
        • 250g (1 cup) bulgur wheat
        • 750ml (3 cups) water
        • 1 bunch fresh parsley, chopped (for garnish)

        Instructions:

        Step 1: Searing the Lamb

        Heat olive oil in a large pot or Dutch oven over medium-high heat. Season lamb shanks with salt and pepper. Sear them in the hot oil until they are browned on all sides, approximately 10 minutes.
