        • 200g (1 cup) Toor Dal (yellow pigeon peas)
        • 1.2 L (5 cups) Water, divided
        • 150g (1 cup) Mixed Vegetables (carrot, potato, brinjal), chopped
        • 1 medium Tomato, chopped
        • 1 medium Onion, sliced
        • 10g (1 tbsp) Tamarind Paste
        • 15ml (1 tbsp) Oil
        • 5g (1 tsp) Mustard Seeds
        • 5g (1 tsp) Fenugreek Seeds
        • 2 dried Red Chillies
        • 10 curry leaves
        • 10g (1 tbsp) Sambar Powder
        • 5g (1 tsp) Turmeric Powder
        • Salt to taste
        • Fresh Coriander for garnish

        Ingredients for Rice

        • 300g (1.5 cups) Basmati Rice
        • 500ml (2 cups) Water
        • 5g (1 tsp) Salt

        Instructions

        Step 1: Cook the Dal

        Rinse the Toor Dal thoroughly under cold water. Add Dal to a pressure cooker with 750ml (3 cups) water and a pinch of turmeric. Cook for 3-4 whistles or until the dal is soft and mushy.

        Step 2: Prepare the Sambar

        In a large saucepan, heat oil over medium flame. Add mustard seeds, fenugreek seeds, dried red chillies, and curry leaves. Saute until the mustard seeds begin to pop. Add the sliced onions and saute until golden brown. Add chopped tomatoes and continue to cook until they soften.

        Step 3: Cook Vegetables

        Add chopped mixed vegetables to the pan, along with 450ml (2 cups) water. Stir in the tamarind paste, sambar powder, and salt. Cover and simmer until the vegetables are tender.

        Step 4: Combine and Simmer

        Add the cooked dal to the vegetable mix. Adjust the consistency by adding more water if needed. Let it simmer for another 10-15 minutes to allow the flavors to meld together.

        Step 5: Cook the Rice

        Rinse the basmati rice until water runs clear. Bring 500ml (2 cups) of water and salt to a boil in a saucepan. Add rice, lower heat, cover, and simmer for 15 minutes or until the rice is cooked and fluffy.

        Step 6: Serve

        Garnish the Sambar with fresh coriander leaves and serve hot over the cooked rice. Enjoy the harmony of flavors enveloping each bite!
