        Dry Brining Recipe

        Ingredients

        • 40g (2 tbsp) kosher salt

        • 10g (1 tbsp) olive oil

        In a large pot, combine the water, kosher salt, and sugar. Heat until the salt and sugar dissolve completely. Remove from heat and add the bay leaf, peppercorns, and dried herbs. Allow the brine to cool completely before use.
